- 3 tablespoons of extra virgin olive oil divided
- 1/2 medium yellow onion diced
- 1 pound boneless skinless chicken breasts cut into bite sized pieces
- 2 cloves garlic minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground pepper
- 1 cup uncooked extra long grain white rice
- 1 large bunch of fresh broccoli
- 2 1/2 cups low-sodium chicken broth
- 1 1/2 to 2 cups extra sharp cheddar cheese
Instructions
- Heat two tablespoons of olive oil in a pan over medium heat and sauté diced onions.
- Season the bite-sized chicken pieces with kosher salt and freshly ground pepper.
- Once onions have softened, raise the heat to medium-high and add the chicken to the pan.
- Brown the chicken pieces, adding minced garlic after about 2 minutes.
- Move the chicken to one side of the pan, then add the remaining tablespoon of olive oil to the other side.
- Sauté the uncooked rice in the olive oil for 2-3 minutes until it turns golden.
- Pour in the chicken broth, bring to a boil, and stir to combine the mixture.
- Reduce heat to low, cover the pan, and let it cook for approximately 12 minutes.
- While cooking, remove broccoli florets and chop them into bite-sized pieces.
- After 12 minutes, mix in the broccoli and continue cooking covered for another 8 minutes or until both the broccoli and rice are tender.
- Stir in half a cup of the cheddar cheese until melted and fully combined.
- Sprinkle the remaining cheese on top, cover the pan to let it melt for 2-3 minutes.
Notes
You can substitute chicken with turkey or tofu for a different protein.
Feel free to add your favorite spices or herbs for extra flavor.
Make sure the broccoli is cooked but still crisp for best texture.
