Description

These zucchini muffins are moist, flavorful, and incredibly easy to make. Bursting with the goodness of grated zucchini and warm spices, they make for a perfect snack or breakfast option that everyone will love.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup white whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon fine kosher salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 cup avocado oil or vegetable oil
  • 1/4 cup unsalted butter, melted and cooled
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 eggs, room temperature
  • 2 teaspoons vanilla
  • 2 cups grated zucchini
  • Coarse sugar for sprinkling on top of the muffins, optional

Instructions

  1. Preheat oven to 425° F and prepare a 12-cup muffin pan with parchment paper liners or cooking spray.
  2. In a large mixing bowl, whisk together the all-purpose flour, white whole wheat flour, baking powder, baking soda, salt, cinnamon, and allspice.
  3. In a separate bowl, combine the oil, melted butter, brown sugar, granulated sugar, eggs, vanilla, and grated zucchini, whisking until well blended.
  4. Pour the wet mixture into the dry ingredients and gently fold with a rubber spatula until no flour streaks remain.
  5. Evenly distribute the batter into the prepared muffin pan. Optionally, sprinkle coarse sugar on top of each muffin.
  6. Bake for 5 minutes at 425° F, then reduce the temperature to 350° F and bake for an additional 12-15 minutes until a toothpick comes out with a few crumbs.
  7. Allow muffins to cool in the pan for 5 minutes before transferring to a wire cooling rack. Serve warm or cool completely before storing.

Notes

Make sure to squeeze out excess moisture from the grated zucchini before adding to the batter for best texture.
These muffins can be stored in an airtight container at room temperature for a couple of days or frozen for longer storage.
Feel free to add nuts or chocolate chips for extra flavor and texture.
