Description

These Zucchini Fritters are a delicious blend of shredded zucchini, cheeses, and herbs, making a perfect, quick meal or snack. Easy to prepare and packed with flavor, they’re sure to please everyone at the table!


Ingredients

Scale
  • 3 tbsp avocado oil
  • 2 cups shredded zucchini
  • 1 cup panko bread crumbs
  • 2 large eggs
  • 1/3 cup fresh grated parmesan cheese
  • 1/4 cup finely shredded mozzarella cheese
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp fresh cracked black pepper

Instructions

  1. Grate zucchini and squeeze out excess moisture using a mesh bag or cheese cloth.
  2. Mix squeezed zucchini with the remaining ingredients until well combined.
  3. Preheat a large pan over medium heat and add oil.
  4. Use an ice cream scoop to shape fritters and place them in the pan carefully.
  5. Cook for 4-6 minutes on each side, flipping once for best results.

Notes

Make sure to squeeze out as much liquid from grated zucchini as possible.
Cook fritters over medium heat to ensure thorough cooking.
Add more oil if cooking multiple batches.
