  • 2 cups all-purpose flour
  • 1 teaspoon baking powder

  • 1 cup packed light brown sugar
  • ¾ cup avocado oil
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • ½ cup Greek yogurt
  • ½ cup maple syrup
  • ½ cup unsweetened plain almond milk
  • 4 oz. fat-free cream cheese, room temperature
  • ½ cup Greek yogurt
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch baking dish or line it with parchment paper.
  2. Place the grated zucchini in a clean towel, squeeze out excess liquid, and set aside.
  3. In a large bowl, mix the brown sugar, avocado oil, eggs, vanilla extract, Greek yogurt, and almond milk until smooth.
  4. In a separate bowl, whisk the flour, baking powder, baking soda, and sea salt.
  5. Combine the dry ingredients with the wet ingredients and the squeezed zucchini, folding gently until just mixed.
  6. Pour the batter into the prepared baking dish and spread evenly.
  7. Bake for 35-40 minutes until a toothpick comes out clean or with a few moist crumbs.
  8. Let the cake cool in the pan for at least 3 hours before frosting.
  9. For the frosting, beat the cream cheese until smooth, then add Greek yogurt, maple syrup, and vanilla. Mix until creamy.
  10. Spread the frosting on the cooled cake, slice into bars, and serve.
