Description

This Unbelievably Delicious Peach Cobbler Pound Cake combines the sweetness of ripe peaches with a moist, rich pound cake. The dish features fresh peaches baked into the cake and a drizzle of sweet glaze, making it perfect for gatherings or as a comforting dessert at home.

Ingredients

Scale
  • 1 ripe peach, peeled, sliced
  • ½ cup brown sugar
  • ½ cup melted butter
  • 1 ½ cups butter, softened
  • 1 ¼ cup sugar
  • 1 ¼ cup light brown sugar
  • 1 cup cream cheese, softened
  • 6 eggs
  • 1 Tablespoon vanilla extract
  • 3 cups flour
  • ¼ teaspoon salt
  • 2 ripe peaches, peeled and chopped
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt
  • 2 Tablespoons whole milk

Instructions

  1. Preheat the oven to 300 degrees F and spray a large bundt pan with baking spray.
  2. Prepare the topping by placing the sliced peaches in the bottom of the greased bundt pan. Mix the brown sugar and melted butter, pouring it over the peaches. Set aside.
  3. Beat the softened butter, sugar, brown sugar, and cream cheese together until light and fluffy. Remember to scrape down the sides for even mixing.
  4. Add the eggs one at a time, mixing and scraping the bowl after each addition.
  5. Incorporate the vanilla extract and mix well.
  6. Gradually add the flour in ½ cup portions, mixing after each addition, then stir in the salt.
  7. Fold in the diced peaches gently with a spatula.
  8. Pour the batter into the bundt pan over the peaches.
  9. Bake for 70 minutes or until a toothpick comes out clean from the center.
  10. Allow the cake to cool in the pan for 30 minutes before flipping it onto a serving plate.
  11. To make the glaze, mix together the powdered sugar, vanilla, salt, and milk, then drizzle it over the cake before slicing.

Notes

For added flavor, consider using ripe, seasonal peaches.
