This Tiramisu Cake features an irresistible blend of flavors and simple preparation. With layers of fluffy cake, rich frosting, and a dusting of cocoa, it’s perfect for gatherings or a comforting dessert at home.

- 6 large eggs (room temperature)
- 1 cup granulated sugar
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 4 ounces cream cheese (room temperature)
- 4 ounces mascarpone cheese (cold)
- 1 cup butter (room temperature, 2 sticks)
- 5 cups powdered sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup strongly brewed coffee or espresso
- 1/4 cup unsweetened cocoa powder (for garnish)
Instructions
- Preheat the oven to 350°F. Grease three 6-inch round cake pans and line the bottoms with parchment paper.
- In a stand mixer, combine the eggs and granulated sugar, beating until the mixture reaches the ‘ribbon stage’.
- Sift in the flour, baking powder, and cinnamon; gently fold them in without deflating the eggs.
- Divide the batter among the prepared pans and bake for 15-18 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes before turning them out onto wire racks. Optionally freeze layers for firmness before frosting.
- In a stand mixer, mix cream cheese, mascarpone, and butter until smooth. Gradually add powdered sugar, then vanilla extract, and beat until fluffy.
- Brush the tops of the cooled cake layers with espresso. Layer the cake, frosting between layers, and on top. Decorate with any remaining frosting.
- Sift cocoa powder over the finished cake, then refrigerate for 4 hours before serving.
Notes
The optional freezing of baked layers helps achieve a firmer cake that’s easier to frost.
Use high-quality espresso for the best flavor in both the cake and the frosting.
Allow the cake to chill to enhance the flavors before serving.
