Description

This Tiramisu Cake features an irresistible blend of flavors and simple preparation. With layers of fluffy cake, rich frosting, and a dusting of cocoa, it’s perfect for gatherings or a comforting dessert at home.


Ingredients

  • 6 large eggs (room temperature)
  • 1 cup granulated sugar
  • 1 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 4 ounces cream cheese (room temperature)
  • 4 ounces mascarpone cheese (cold)
  • 1 cup butter (room temperature, 2 sticks)
  • 5 cups powdered sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 cup strongly brewed coffee or espresso
  • 1/4 cup unsweetened cocoa powder (for garnish)

Instructions

  1. Preheat the oven to 350°F. Grease three 6-inch round cake pans and line the bottoms with parchment paper.
  2. In a stand mixer, combine the eggs and granulated sugar, beating until the mixture reaches the ‘ribbon stage’.
  3. Sift in the flour, baking powder, and cinnamon; gently fold them in without deflating the eggs.
  4. Divide the batter among the prepared pans and bake for 15-18 minutes, or until a toothpick comes out clean.
  5. Cool the cakes in the pans for 10 minutes before turning them out onto wire racks. Optionally freeze layers for firmness before frosting.
  6. In a stand mixer, mix cream cheese, mascarpone, and butter until smooth. Gradually add powdered sugar, then vanilla extract, and beat until fluffy.
  7. Brush the tops of the cooled cake layers with espresso. Layer the cake, frosting between layers, and on top. Decorate with any remaining frosting.
  8. Sift cocoa powder over the finished cake, then refrigerate for 4 hours before serving.

Notes

The optional freezing of baked layers helps achieve a firmer cake that’s easier to frost.
Use high-quality espresso for the best flavor in both the cake and the frosting.
Allow the cake to chill to enhance the flavors before serving.
