- 15 ounces corn drained
- 1 medium tomato diced
- 1 jalapeño seeds and ribs removed and diced
- 1/4 red onion diced
- 2 garlic cloves minced
- 2 tablespoons lime juice
- 1 tablespoon olive oil
- 2 tablespoons minced fresh cilantro
- 1/2 teaspoon cumin
- 1/2 teaspoon kosher salt or 1/4 teaspoon table salt
- dash freshly ground black pepper
Instructions
- In a large bowl, combine all the ingredients: black beans, corn, diced tomato, jalapeño, red onion, garlic, lime juice, olive oil, cilantro, cumin, salt, and pepper.
- Stir everything together until well mixed.
- Taste the mixture and adjust salt and pepper according to preference.

For a thicker salsa, reduce the amount of corn or add more beans.
