  • 2 tablespoons all-purpose flour
  • 1 teaspoon pure vanilla extract
  • 4 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350ºF. Spray a 9-inch springform pan with nonstick spray and line it with parchment paper.
  2. Combine the graham cracker crumbs and melted butter in a bowl until it resembles wet sand.
  3. Press the mixture firmly into the bottom of the springform pan to create an even crust.
  4. Par-bake the crust for 8 minutes, then let it cool.
  5. For the filling, beat the cream cheese in a stand mixer at medium speed until light and smooth, about 1-2 minutes.
  6. Add the granulated sugar, milk, sour cream, flour, and vanilla extract. Mix until just combined, scraping the bowl as needed.
  7. With the mixer on low, add the eggs one at a time, allowing each to incorporate fully before adding the next.
  8. Pour the filling over the cooled crust.
  9. Bake for 55-60 minutes. The edges should be set while the center jiggles slightly.
  10. Turn off the oven and crack open the oven door. Leave the cheesecake inside for 1 hour.
  11. Next, transfer the cheesecake to the refrigerator to chill for at least 6 hours, preferably overnight.
  12. To serve, warm a knife under hot water, wipe it, and run it around the edges of the springform pan. Open the latch and remove the sides.
  13. Transfer the cheesecake to a serving dish and slice with a warm, clean knife. Serve with berries, whipped cream, or chocolate sauce.
