Description

This Sushi Bowl is a delightful blend of flavors and textures, featuring sushi rice, fresh veggies, and imitation crab, making it a perfect quick and healthy dinner option for any night.


Ingredients

  • 2 cups sushi rice, rinsed until the water runs clear
  • 2 1/2 cups water
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon kosher salt
  • 1/2 cup mayonnaise
  • 1 1/2 tablespoons sriracha sauce
  • 1 garlic clove, finely minced or pressed
  • 16 ounces imitation crab meat
  • 1 avocado, cut into slices
  • 1 cup shelled edamame
  • 2 carrots, peeled and cut into match sticks
  • 4 mini cucumbers, sliced thin
  • 0.35 ounce roasted seaweed
  • 2 teaspoons sesame seeds

Instructions

  1. In a small pot, bring the sushi rice and water to a boil, then reduce to a simmer and cook for 20 minutes.
  2. While the rice cooks, mix the rice vinegar, sugar, and kosher salt in a bowl, ensuring the sugar and salt dissolve completely.
  3. Once the rice is done, stir the vinegar mixture into the rice until well combined.

Notes

Feel free to add other toppings like sliced radish or greens.
Make sure to rinse the sushi rice thoroughly to remove excess starch for perfect texture.
Adjust the sriracha sauce to your spice preference.
