Description

These Sugar Cookie Fruit Pizzas combine a fluffy butter and sugar base topped with creamy frosting and fresh fruit, perfect for any gathering or dessert craving. Enjoy their irresistible flavor and easy preparation!

Ingredients

Scale
  • 1 cup (227 g) salted butter
  • 1½ cups (300 g) granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 2 teaspoons vanilla
  • ½ teaspoon almond extract
  • 2¾ cups (380 g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 4 ounces (113.4 g) cream cheese, room temperature
  • 2 tablespoons salted butter
  • 1 teaspoon vanilla
  • pinch of salt
  • 1¾ cup (210 g) powdered sugar
  • fresh fruit for topping

Instructions

  1. Preheat your oven to 375°F and line two baking sheets with parchment paper.
  2. In a stand mixer, beat together the butter and sugar on medium-high speed until light and fluffy, which should take about 3 minutes.
  3. Add the egg, egg yolk, vanilla, and almond extract, mixing on low speed until smooth (around 30 seconds).
  4. Gradually mix in the baking soda, salt, and flour until just combined.
  5. Using a ¼ cup cookie scoop, form large balls of dough and place 6-7 dough balls on each lined baking sheet.
  6. Bake the cookies for 11-14 minutes until they are lightly golden around the edges with some crackling on top, ensuring not to overbake for a chewy texture.
  7. In a bowl, beat the cream cheese and butter until smooth. Then, mix in the vanilla, pinch of salt, and powdered sugar until the mixture is creamy.
  8. Top each cookie with a generous layer of the frosting and add diced fresh fruit on top.

Notes

Ensure the butter is at room temperature for easier mixing.
Cut the fruit into very small pieces for better presentation on the cookies.
Store any leftover cookies in an airtight container to maintain freshness.
