Description

These Strawberries and Cream Cookies are deliciously rich with the perfect balance of sweetness and fruity flavor. Made with white chocolate and freeze-dried strawberries, they’re a delightful treat everyone will adore! Perfect for gatherings or a sweet snack.


Ingredients

  • 3 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, room temperature
  • 1 and 1/4 cups granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1 tablespoon vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 bags freeze-dried strawberries, 1.2 ounces each

Instructions

  1. Preheat the oven to 325°F and line two baking sheets with parchment paper.
  2. In a large bowl, combine flour, baking soda, and salt; set aside.
  3. In a mixer bowl, cream together butter, granulated sugar, and brown sugar on medium speed until light and fluffy. Add vanilla extract and mix well.
  4. Reduce speed to medium-low; add eggs one at a time, mixing well after each addition and scraping the bowl as needed.
  5. Lower speed to low and mix in the flour mixture until just combined. Gently fold in white chocolate chips and freeze-dried strawberries until evenly distributed.
  6. Scoop 3 tablespoons of cookie dough, roll into balls, and place on prepared sheets, spacing them apart.
  7. Bake one sheet at a time for 12-13 minutes until the edges turn golden but the centers remain soft.
  8. Remove from oven and tuck in any edges with a spatula. Optionally, press extra white chocolate chips into the tops.
  9. Let cookies cool on the baking sheet for 20 minutes before transferring to a wire rack.

Notes

Make sure to use room temperature butter and eggs for the best texture.
Store any leftover cookies in an airtight container at room temperature.
For a more intense strawberry flavor, consider adding extra freeze-dried strawberries.
