Description

This Steak Rice Bowl is perfect for a quick dinner. With juicy flank steak, zesty lime, and fresh toppings, it’s a simple yet flavorful meal everyone will love.


Ingredients

  • pounds flank steak or skirt steak
  • 2 Tablespoons olive oil
  • 2 Tablespoons lime juice
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups jasmine rice cooked
  • 1 Tablespoon olive oil or butter
  • Zest of 1 lime
  • 2 Tablespoons fresh lime juice
  • ¼ cup fresh cilantro chopped
  • Salt to taste
  • Diced avocado
  • Chopped tomatoes
  • Thinly sliced red onion
  • Fresh cilantro
  • Lime wedges
  • ½ cup sour cream
  • 2 Tablespoons lime juice or Greek yogurt
  • Pinch of salt
  • Splash of water to thin only if needed

Instructions

  1. In a bowl, whisk together the olive oil, lime juice, minced garlic, ground cumin, chili powder, smoked paprika, salt, and black pepper. Add the steak, ensuring it's well coated in the marinade. Let it sit for at least 30 minutes, or up to 8 hours for more flavor.
  2. Preheat a cast-iron skillet or grill pan over high heat. Sear the marinated steak for about 3 to 4 minutes on each side until a nice char forms and it reaches your desired doneness. Let it rest for 5 minutes before slicing against the grain.
  3. While the steak is resting, fluff the warm jasmine rice with olive oil, lime zest, fresh lime juice, chopped cilantro, and salt, adjusting to taste if necessary.
  4. In a separate small bowl, prepare the yogurt drizzle ingredients and set aside.
  5. To serve, layer the fluffed rice in bowls, top it with the sliced steak, and add your favorite toppings such as diced avocado, chopped tomatoes, sliced red onion, fresh cilantro, and lime wedges. Finish with a drizzle of the creamy sauce and some additional lime juice over the top.

Notes

For a spicier version, add more chili powder to the marinade.
Allow the steak to marinate longer for a richer flavor.
