Description

These Spring Brunch Puff Pastry Egg Tarts blend crispy bacon, rich eggs, and melted cheddar for a delightful treat. Ideal for brunch or a quick snack, they are easy to make and simply delicious!

  • 4 slices of original bacon, cut into 1 inch pieces
  • 13 ounces puff pastry dough, thawed completely (not frozen)
  • 4 eggs
  • 1 tablespoon water
  • 1/3 cup whole milk
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 teaspoon dijon mustard
  • 1 cup cheddar cheese, grated from the block
  • 1/4 cup green onion for serving, sliced thinly on a bias

Instructions

  1. Preheat the oven to 375°F. In a skillet over medium-low heat, cook the bacon until crispy. Transfer the bacon to a paper towel-lined plate to drain excess grease.
  2. In a bowl, mix 1 egg with the water to create the egg wash. Whisk together until combined.
  3. Cover a large cookie sheet with parchment paper. Unroll the puff pastry and cut it into 8 rectangular pieces. Place them apart on the cookie sheet. Use a paring knife to make a border and fork prick the inner area to prevent excessive puffing. Brush the tops with egg wash and bake for 10 minutes.
  4. While the dough is baking, whisk together the remaining 3 eggs, milk, dijon mustard, salt, and pepper. A measuring glass with a spout can help pour the mixture into the tarts easily.
  5. Remove the puff pastry from the oven and gently press down the centers with a fork, keeping the edges puffed.
  6. Carefully pour the egg mixture into each tart, taking care not to overfill. Sprinkle about half of the cheddar cheese on top. Return to the oven and bake for another 10 minutes.
  7. Once removed from the oven, sprinkle the bacon pieces and the remaining cheese over the tarts. Bake for an additional 5 minutes.
  8. Top with sliced green onions and serve with dijonnaise sauce if desired. Enjoy this flaky egg puff pastry!

Notes

For a vegetarian option, consider substituting bacon with sautéed vegetables.
You can customize toppings with different cheeses or herbs for added flavor.
Make sure to press down the centers of the tarts after the initial bake to create space for the egg filling.
