  • pounds chicken breasts
  • 1/4 cup avocado oil
  • 3 tablespoons lime juice
  • 1 tablespoon garlic, minced
  • 2 tablespoons light brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne powder
  • 1 each chili in adobo sauce, seeds removed and minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lime

Instructions

  1. Trim any excess fat or tendons from the chicken breasts.
  2. Place the chicken in a freezer bag or between two sheets of plastic wrap.
  3. Use a meat tenderizer, rolling pin, or bottom of a mason jar to pound the thickest parts of the chicken.
  4. In a small bowl, mix together the avocado oil, lime juice, garlic, brown sugar, chili powder, cumin, cayenne, and minced chili in adobo sauce until well combined.
  5. Pour the marinade over the chicken in the freezer bag or a mixing bowl, ensuring all sides are evenly coated.
  6. Refrigerate the chicken to marinate for at least 2 hours, or up to 24 hours.

Notes

Pounding the chicken helps it cook evenly.
Marinating longer enhances the flavors, so consider doing it overnight for the best results.
