Description

Enjoy a delightful homemade peach crisp with a crunchy oat topping. This recipe features sweet, juicy peaches combined with a buttery oat crust, making it an ideal dessert for any occasion.


Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Prepare a pie pan by spraying it with non-stick spray and set aside.
  2. Pit, peel, and slice enough peaches to make 5 cups and place them in a medium-sized bowl.
  3. Add sugar, cornstarch, vanilla, and lemon juice to the peaches and stir until well combined.
  4. Transfer the peach mixture into the prepared pie pan.
  5. In a food processor, combine flour, brown sugar, and cinnamon, and pulse until mixed. Add the cold, cubed butter and pulse until crumbly, then gently pulse in the rolled oats.
  6. Spread the oat mixture evenly over the peaches in the pie pan.
  7. Bake in the preheated oven for 30-35 minutes or until the topping is golden brown.

Notes

Serve warm with vanilla ice cream for a comforting dessert.
Store leftovers in an airtight container in the fridge for up to 2 days.
Feel free to substitute with other fruits like apples or berries for variation.
