- 3 medium zucchini
- 1 lb ground italian sausage
- ½ onion, chopped
- 2 garlic cloves, minced
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- Salt and pepper, as needed
Instructions
- Preheat the oven to 375°F and line a large baking pan with foil or parchment paper.
- Halve the zucchinis lengthwise and scoop out their flesh, chopping the flesh roughly and setting it aside.
- In a large skillet over medium-high heat, cook the sausage for about 3-4 minutes until browned.
- Add the chopped onion, minced garlic, and chopped zucchini to the skillet, cooking until the sausage is fully cooked and the veggies are softened, roughly another 3-4 minutes.
- Stir in the marinara sauce until fully combined.
- Arrange the zucchini halves in the prepared baking pan, sprinkling with salt and pepper. Fill each zucchini boat with the sausage mixture and top with mozzarella cheese.
- Bake for 15-20 minutes, until the cheese is melted and the sausage is bubbling. Test the zucchini for tenderness, adjusting cooking time if needed.
- Serve warm and enjoy; store leftovers in the fridge.

Feel free to use spicy sausage for extra heat.
You can substitute the mozzarella with any cheese of your choice.
