Description

These Sausage Stuffed Zucchini Boats are filled with savory ground sausage, rich marinara, and melted cheese. Perfect for a quick and satisfying dinner, they’re both flavorful and healthy, making mealtime easy and enjoyable.


Ingredients

  • 3 medium zucchini
  • 1 lb ground italian sausage
  • ½ onion, chopped
  • 2 garlic cloves, minced
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Salt and pepper, as needed

Instructions

  1. Preheat the oven to 375°F and line a large baking pan with foil or parchment paper.
  2. Halve the zucchinis lengthwise and scoop out their flesh, chopping the flesh roughly and setting it aside.
  3. In a large skillet over medium-high heat, cook the sausage for about 3-4 minutes until browned.
  4. Add the chopped onion, minced garlic, and chopped zucchini to the skillet, cooking until the sausage is fully cooked and the veggies are softened, roughly another 3-4 minutes.
  5. Stir in the marinara sauce until fully combined.
  6. Arrange the zucchini halves in the prepared baking pan, sprinkling with salt and pepper. Fill each zucchini boat with the sausage mixture and top with mozzarella cheese.
  7. Bake for 15-20 minutes, until the cheese is melted and the sausage is bubbling. Test the zucchini for tenderness, adjusting cooking time if needed.
  8. Serve warm and enjoy; store leftovers in the fridge.

Notes

Feel free to use spicy sausage for extra heat.
You can substitute the mozzarella with any cheese of your choice.
For a vegetarian option, try using plant-based sausage.
