Description

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1 tsp dried basil
  • 1/2 tsp crushed red pepper flakes
  • 1/21 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat the oven to 475°F and grease a large rimmed baking sheet with oil.
  2. Wash the zucchini, dry it, trim the ends, and slice into 1/4-1/2 inch thick slices.
  3. In a mixing bowl, combine the zucchini, olive oil, balsamic vinegar, and seasonings. Mix until well coated.
  4. Spread the seasoned zucchini in a single layer on the prepared baking sheet, leaving space between each slice.
  5. Top each zucchini slice with grated parmesan cheese.

Notes

For crunchier zucchini, slice them thicker; for softer texture, slice them thinner.
If worried about sticking, you can line the baking sheet with parchment paper, but it may retain moisture.
