Description

These Red, White, and Blue Tortilla Cups are bursting with flavor and are incredibly easy to make. With crispy tortilla cups, creamy whipped cream, and fresh berries, they are perfect for a quick, delightful dessert or snack.


Ingredients

  • 3 small flour tortillas
  • 2 tbsp. coconut oil melted
  • 1 tbsp. honey
  • Ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp. natural sweetener like Truvia
  • 1 tsp. vanilla
  • Fresh berries like blueberries, raspberries, and strawberries
  • Optional: cocoa powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tortillas into quarters using a pizza slicer.
  3. Mix together the melted coconut oil and honey in a small bowl until well combined.
  4. Brush both sides of each tortilla with the coconut oil mixture, then sprinkle with ground cinnamon.
  5. Arrange three tortilla triangles in a muffin pan to form a cup shape.
  6. Bake the tortilla cups for 15 minutes until crispy, then remove from the pan and allow to cool.
  7. In a mixing bowl, combine the whipping cream, sweetener, and vanilla; beat until small peaks begin to form.
  8. Spoon or pipe the whipped cream into each tortilla cup.
  9. Top the whipped cream with fresh berries of your choice.
  10. Sprinkle cocoa powder on top if desired.

Notes

Ensure the tortillas are lightly golden for the best crisp texture.
Feel free to mix and match the berries according to your preference.
For added flavor, consider drizzling more honey over the berries.
