- 30 Oreo cookies
- 4 Tablespoons unsalted butter, melted
- 3 – 8 ounce packages cream cheese, softened
- 1 1/2 cups granulated sugar
- 1/4 cup sour cream
- 2 teaspoons vanilla extract
- 1/4 cup all purpose flour
- 3 large eggs
- red & blue gel food colors
Instructions
- Preheat the oven to 325 degrees Fahrenheit. Line a 9×13 pan with foil.
- In a food processor, crush the Oreo cookies until they become crumbs.
- Mix the cookie crumbs with the melted butter until combined, then press the mixture evenly into the bottom of the prepared pan. Bake for 10 minutes and let cool.
- Place a large baking sheet filled halfway with water on the bottom rack of the oven, then allow the oven to preheat again.
- Beat the cream cheese with the granulated sugar until smooth and creamy. Incorporate the sour cream, vanilla, and flour and mix again.
- Gently add the eggs and beat until combined.
- Divide the batter into three bowls, and tint two of those bowls with red and blue gel food colors respectively.
- Spoon the colored batter over the crust alternatively; use a butter knife to create swirls without over-mixing.
- Bake the pan above the water-filled baking sheet for 45-50 minutes. When done, remove from the oven and cool on a wire rack.
- After one hour on the counter, refrigerate for 4-6 hours before cutting into squares and serving with whipped cream and sprinkles if desired.
Notes
Make sure the cream cheese is fully softened for a smooth filling.
You can adjust the color intensity with more or less food color based on your preference.
Refrigerating the cheesecake bars longer helps improve the texture and flavor.
