Description

Ingredients

  • 1 cup butter, melted and slightly cooled
  • 1 cup granulated white sugar
  • 1 cup packed dark brown sugar
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour
  • 1 cup Dutch-processed cocoa
  • 1 teaspoon espresso powder, optional
  • 1 teaspoon kosher salt
  • 1 1/4 cups chopped chocolate, divided
  • 3/4 cup creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 1/4 cups powdered sugar
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon heavy cream, or whole milk
  • 3 cups puppy chow

Instructions

  1. Preheat the oven to 350°F and line a 9×13-inch baking pan with parchment paper, lightly greasing it.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs and vanilla extract, mixing until well combined. Stir in flour, cocoa powder, espresso powder (if using), and salt until just combined. Fold in 1 cup of chopped chocolate.
  3. Spread the batter into the prepared pan and sprinkle the remaining 1/4 cup chopped chocolate on top. Bake for 25 to 35 minutes, until a toothpick comes out with a few moist crumbs. Allow the brownies to cool completely in the pan.
  4. In a stand mixer, beat peanut butter and softened butter until smooth. Add powdered sugar, salt, vanilla extract, and heavy cream, whipping until light and fluffy.
  5. Spread the peanut butter frosting evenly over the cooled brownies.
  6. Sprinkle puppy chow over the frosting, pressing gently to adhere.
  7. Slice into squares and serve.

Notes

Ensure not to overbake the brownies for a fudgy texture.
The espresso powder enhances the chocolate flavor, but it’s optional.
Allow the brownies to cool completely for clean slices.
