- 12 ounces white chocolate chips
- optional: extra graham cracker crumbs or english toffee bits
Instructions
- Combine softened cream cheese and powdered sugar in a mixing bowl and beat until smooth.
- Mix in pumpkin puree and cinnamon until fully combined.
- Incorporate graham cracker crumbs, pumpkin pie spice, and cinnamon into the mixture until thick and smooth.
- Transfer the dough to a bowl, cover, and refrigerate for about 2 hours.
- Prepare a baking sheet with parchment paper.
- Scoop a tablespoon of dough and roll it into a ball, placing it on the baking sheet; repeat with remaining dough, spacing truffles 2 inches apart.
- Chill truffles for 20-25 minutes before chocolate dipping.
- Melt white chocolate chips in a microwave-safe bowl in short intervals, stirring in between.
- Take a truffle, dip it into the melted chocolate using a fork, and ensure it's fully coated before scraping off excess chocolate.
- Place dipped truffles back on the parchment-lined baking sheet using another fork.
- Sprinkle English toffee bits or graham cracker crumbs on top immediately.
- Let the truffles set in the refrigerator before serving; they can be kept at room temperature for a few hours.
