Description

These Pumpkin Delight Cookies (Inspired by Little Debbie!) are a delightful mix of pumpkin and spices, featuring creamy filling and a fun cookie assembly. Perfect for gatherings or a cozy dessert!


Ingredients

  • 15 oz canned pure pumpkin
  • 1 1/2 cup sugar
  • 2 tsp pumpkin pie spice
  • 2 tsp cinnamon
  • 1 tsp cornstarch
  • 3/4 cup apple juice
  • 12 tbsp butter, melted
  • 1 cup sugar
  • 1/4 cup molasses
  • 1 egg
  • 2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 3 cups flour

Instructions

  1. Prepare the pumpkin filling by whisking together pumpkin purée, 1½ cups sugar, pumpkin pie spice, and cinnamon in a medium saucepan until combined.
  2. In a separate bowl, stir cornstarch and apple juice until smooth, then add to the saucepan and cook over medium heat until bubbling. Reduce heat and simmer for about 10 minutes, stirring occasionally. Remove from heat and allow to cool completely.
  3. For the cookie dough, beat together melted butter and 1 cup sugar using a hand mixer until slightly thickened, about 2–3 minutes. Mix in molasses and egg until smooth.
  4. Incorporate the baking soda, cinnamon, pumpkin pie spice, salt, and flour until a soft dough forms. If sticky, add more flour, a tablespoon at a time.
  5. Cover the dough and refrigerate for 30 minutes. Preheat the oven to 350°F. Roll out dough to about ¼ inch thick and cut into cookies.
  6. Cut out shapes, making sure to create faces for half of them using a small knife.
  7. Spoon 1 tablespoon of cooled filling onto the bottom cookies and top each with a face cookie, lightly pressing to seal.
  8. Transfer cookies to a parchment-lined baking sheet and bake for 10–13 minutes. Allow cooling on the sheet for a few minutes before moving to a cooling rack.

Notes

Ensure the pumpkin filling cools completely before assembling cookies for the best texture.
If dough is too sticky, adjust with additional flour, a little at a time.
Use various cookie cutters to create shapes according to your preference.
