Instructions
- In a large bowl, mix the pumpkin puree, vegetable oil, granulated sugar, egg, and vanilla extract until well combined.
- Incorporate baking soda, pumpkin pie spice, baking powder, kosher salt, and all-purpose flour into the mixture, stirring until just combined.
- Cover the dough and chill for at least one hour, or up to eight hours for better flavor.
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper or a nonstick mat.
- Drop 2 tablespoons of batter onto the prepared baking sheet, leaving two inches of space between each cookie.
- Bake for 10-12 minutes until cookies are set and edges are lightly golden.
- Allow the cookies to cool for five minutes on the sheet before transferring them to a cooling rack. Repeat with remaining batter, letting cookies cool completely.
