These Plum Bars are a delightful homemade treat combining the tartness of fresh plums with a buttery crust. Easy to make with simple ingredients, they offer a perfect blend of sweet and sour that makes them irresistible for dessert enthusiasts.

- 1 ¾ cup all purpose flour
- ⅔ cup sugar
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup butter, cold
- 1 egg, whisked
- 2 tbsp milk
- 4 plums, diced small
- ¼ cup sugar
- 2 tbsp all purpose flour
- ½ tsp vanilla extract
Instructions
- Preheat the oven to 400° F and line an 8×8 baking dish with parchment paper.
- In a large bowl, mix together the flour, sugar, baking powder, and salt. Grate the cold butter into the bowl using a cheese grater.
- Combine the mixture with your hands until the butter resembles small pebbles. Add the whisked egg and milk, stirring until combined.
- In another bowl, mix the diced plums with ¼ cup sugar, 2 tbsp flour, and vanilla extract until well combined.
- Press ⅔ of the crust mixture into the bottom of the lined baking pan.
- Spread the plum mixture evenly over the crust in the pan, then sprinkle the remaining crust mixture on top.
- Bake in the oven for 30-32 minutes, or until the edges are golden brown. Let cool at room temperature, slice, and enjoy!
Notes
For added flavor, you can sprinkle a little cinnamon on the plum mixture before baking.
These bars can be served warm or chilled and are best enjoyed within 2 days for optimal freshness.
