Description

This Pineapple Coconut Mojito combines the tropical flavors of pineapple, coconut milk, and fresh mint for a refreshing drink that’s easy to make. Ideal for parties or a relaxing evening, this cocktail is a delightful way to enjoy summer.


Ingredients

Scale
  • 3 mint leaves
  • 1 teaspoon brown sugar
  • ice
  • 2 ounces rum
  • 2 ounces pineapple juice
  • 1 ounce coconut milk
  • ¾ ounce lime juice
  • club soda

Instructions

  1. In a cocktail shaker, combine mint leaves and brown sugar, then press with a muddler to release the mint oils.
  2. Fill the shaker halfway with ice and add rum, pineapple juice, coconut milk, and lime juice.
  3. Cover the shaker and shake vigorously until chilled and fully mixed, about 10 seconds.
  4. Strain the mixture into a highball glass filled with fresh ice, then top with club soda. Garnish as desired and serve immediately.

Notes

Feel free to adjust the sweetness by adding more or less brown sugar.
For a non-alcoholic version, substitute the rum with extra pineapple juice or a flavored soda.
