  • 1 pound thick-cut bacon, (diced)
  • 1 large yellow onion, (finely diced (about 1 ½ cups))
  • 3 cups (495 g) fresh pineapple, (finely diced (about ½ of a medium pineapple))
  • 2 teaspoons garlic, (minced)
  • ½ cup (100 g) light brown sugar, (packed)
  • ¼ cup (60 g) apple cider vinegar
  • ¼ cup (79 g) maple syrup
  • 1 teaspoon chili powder
  • ¼ teaspoon kosher salt
  • ¼ teaspoon red pepper flakes, (optional)

Instructions

  1. Cook the diced bacon in a skillet over medium heat until crispy, stirring occasionally. Line a plate with paper towels while bacon cooks.
  2. Using a slotted spoon, transfer cooked bacon to the lined plate, keeping about ¼ cup of bacon grease in the skillet, and discarding the rest.
  3. Reduce heat to medium-low and add diced onion to the skillet. Cook while stirring often until the onion softens and begins to caramelize.
  4. Add finely diced pineapple to the skillet with the onion and cook frequently until the pineapple softens and releases its juices, about 10 minutes.
  5. Stir in minced garlic and cook for about 30 seconds.
  6. Add light brown sugar, apple cider vinegar, maple syrup, chili powder, kosher salt, and optional red pepper flakes. Stir to combine all ingredients.
  7. Return the cooked bacon to the skillet and mix everything together.
  8. Simmer the mixture on low heat for 20 to 30 minutes, stirring occasionally until thickened to a jam-like consistency. If too loose, cook longer until more liquid evaporates. The jam should be thick and glossy.
  9. Allow to cool slightly before serving. Serve warm or refrigerate and gently reheat before using.

Notes

Jam can be stored in the refrigerator for up to two weeks.
Great on burgers, sandwiches, or as a dip for cheese boards.
Feel free to adjust the sweetness by modifying the amount of brown sugar or maple syrup.
