- 6 peaches, diced into 2” cubes
- ½ cup sugar
- 1 lemon, juiced
- ½ lemon, zest
Instructions
- Combine diced peaches, sugar, lemon juice, and lemon zest in a large saucepan.
- Bring the mixture to a rapid boil, stirring occasionally, and boil for 20 minutes. Use a wooden spoon to help break down the peaches until the mixture thickens. It is done when the peaches cling to the back of a spoon.
- Transfer the preserves to a large glass jar or smaller jars with sealed lids and refrigerate. Keeps for up to 2 months.
