Instructions
- Cube the peaches, peeling first if they're fresh. If using frozen, be sure to thaw them.
- In a medium saucepan over medium heat, combine the cubed peaches, brown sugar, cinnamon, lemon juice, and cornstarch. Stir the mixture well.
- Heat the mixture until the peach juice starts to separate and it simmers.
- Cook for 10 minutes, stirring occasionally, until the filling thickens. Use a potato masher or similar tool to lightly mash about 20% of the peaches.
- Cook for an additional minute, then remove from the heat and allow to cool completely before use.
Notes
