- 2 cups ripe peaches peeled and diced (about 3–4 peaches)
- 3 tablespoons granulated sugar
- 1 teaspoon lemon juice
- Pinch of salt
- 2 large eggs
- 4 large egg yolks
- 1 1/4 cups granulated sugar
- 2 cups heavy whipping cream
- 2 cups half and half
- 2 tablespoons pure vanilla extract
- 1 tablespoon bourbon optional
Instructions
- Combine diced peaches, sugar, lemon juice, and salt in a medium bowl; let them sit for 20-30 minutes to release juices.
- Transfer half of the peaches and their juices to a saucepan, simmer over medium heat for 5-7 minutes until softened.
- Remove from heat, cool, and pulse in a blender until mostly smooth with some texture; set aside to cool down.
- Refrigerate the remaining fresh peaches for later use.
Notes
For a richer flavor, consider adding the optional bourbon.
