  • 1 1/2 cups blueberries
  • 1 tablespoon fresh lemon juice
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract or vanilla bean paste
  • 6 tablespoons unsalted butter
  • 1 cup white whole wheat flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 3/4 cup milk (dairy or non-dairy)

Instructions

  1. In a saucepan, combine the sliced peaches, blueberries, sugar, lemon juice, cinnamon, ginger, and a pinch of salt. Cook over medium heat for 2-3 minutes until the sugar dissolves, stirring frequently.
  2. Remove the saucepan from the heat and stir in the vanilla extract. Set the mixture aside.
  3. Cut the unsalted butter into pieces and place them in a 9×13 baking dish. Put this dish into the oven while preheating to 350°F to let the butter melt.
  4. In a mixing bowl, combine the flour, sugar, baking powder, salt, cinnamon, and ginger. Gradually pour in the milk, stirring until just combined to create the batter.
  5. Once the butter has melted, pour the batter over it in the baking dish, smoothing it into an even layer.
  6. Spoon the prepared fruit mixture and its juices over the batter. Optionally, sprinkle some turbinado sugar on top before returning the dish to the oven.
  7. Bake at 350°F for 35-40 minutes until the top is golden brown and crisp. Allow to cool for 5 minutes before serving; great with vanilla ice cream.

Notes

For a nuttier flavor, try using almond or oat milk instead of regular milk.
