- 12 oz spaghetti
- salt to taste
- 5 tablespoons olive oil
- 4 cloves garlic, crushed
- red pepper flakes to taste
- 4 canned anchovies
- 5 oz black olives, halved lengthwise and pitted
- 2 heaping tablespoons small capers, rinsed
- 1 (14.5-oz) can diced tomatoes, not drained
- ½ cup packed fresh parsley, finely chopped
- cracked black pepper to taste
Instructions
- Prep your wide skillet for even cooking and gather all ingredients.
- Begin boiling a large pot of water for the pasta. Once boiling, salt the water generously and cook the spaghetti until just al-dente. Drain the pasta, saving a cup of the cooking water.
- While waiting for the pasta to boil, heat the oil in a large skillet over medium-low heat. Add crushed garlic and red pepper flakes (if using), sautéing for about 30 seconds until fragrant.
- If using anchovies, add them to the skillet and sauté for an additional 30-60 seconds until they dissolve in the oil.
- Stir in the olives and capers, cooking for 1 minute more. Then, add the diced tomatoes and half of the chopped parsley, sautéing for 2 additional minutes.
- Cover the skillet and let the sauce simmer on low heat for 8-10 minutes. Season lightly with salt.
- Combine the drained pasta with the sauce, simmering over medium heat. Gradually add the reserved pasta water a little at a time until the sauce is glossy and the pasta is well coated.
- Taste and adjust salt and pepper as needed. Serve immediately, garnished with the remaining parsley.
