Description

This One Pot Spinach Artichoke Chicken Orzo offers a delightful combination of flavors with tender chicken, creamy sauce, and fresh spinach. Perfect for a quick dinner or a comforting meal, it’s easy to prepare and sure to satisfy any craving for homemade goodness.


Ingredients

  • 2 tablespoons olive oil
  • pounds chicken breast
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 16 ounces orzo
  • 4 cups chicken broth
  • 1½ cup heavy cream
  • 4 ounces cream cheese
  • 1 teaspoon salt
  • ¼ cup parmesan cheese, plus more for garnish
  • 3 cloves garlic, minced
  • 1 can quartered artichoke hearts, (14 ounce) drained
  • 8 ounces fresh spinach

Instructions

  1. Cut the chicken into 1-inch cubes and season with salt, pepper, and garlic powder.
  2. Heat a large skillet over medium-high heat. Add olive oil and when hot, place the chicken in a single layer. Cook for 3-4 minutes, then stir and cook for another 3-4 minutes.
  3. Add the orzo to the skillet along with chicken broth and heavy cream. Stir and bring to a simmer, cooking for about 10-12 minutes or until orzo is tender. Stir occasionally to prevent sticking.
  4. Incorporate salt, cream cheese, parmesan cheese, artichoke hearts, and fresh spinach. Continue cooking until spinach wilts and cheese is melted and mixed well.
  5. Garnish with additional parmesan and cracked pepper before serving.

Notes

Feel free to substitute other vegetables if desired, such as mushrooms or bell peppers.
Adjust the amount of garlic according to your preference.
Add extra chicken broth if you prefer a saucier dish.
