- ½ cup boiling water
- ½ cup cold water
- 1 (8-ounce) tub Cool Whip, thawed
- 1½ cups diced seedless watermelon, blotted dry
- 1 (9-inch) graham cracker pie crust
- Watermelon slices and mint leaves, for optional decoration
Instructions
- Stir the watermelon Jell-O into ½ cup of boiling water in a medium bowl until fully dissolved, which takes a minute or two.
- Add ½ cup of cold water and stir well; set aside for about 10 to 15 minutes to cool slightly, being careful not to let it start setting.
- Gently fold Cool Whip into the Jell-O mixture until smooth and creamy, then fold in the diced watermelon.
- Spoon the filling into the graham cracker crust and smooth the top with a spatula.
- Refrigerate the pie for at least 4 hours, or until set and firm throughout.
- Slice and serve chilled, garnished with Cool Whip, fresh watermelon cubes, or mint leaves, if desired.
- Store any leftovers in the fridge, covered, for up to 3 days; do not freeze.
