Morir Soñando Chia Pudding is a creamy and flavorful dish combining high-protein yogurt, fresh orange juice, and chia seeds, perfect for a nutritious dessert or snack. Enjoy its delightful taste and healthy ingredients in this easy homemade preparation!


Ingredients

  • 1/2 cup high-protein plant-based yogurt or skyr, 135g
  • 2 tsp orange zest
  • 1/2 cup freshly squeezed orange juice (about 12 navel oranges)
  • juice of 1 lime or 2 tbsp extra orange juice
  • 2 tbsp agave syrup
  • 1 tsp dominican vanilla or vanilla paste/extract
  • 1/4 tsp kosher salt
  • 3/4 cup non-dairy evaporated milk
  • 1/3 cup chia seeds, 57g
  • 3 tbsp rolled oats, 16g
  • 23 pitted medjool dates, 40g
  • 2 tbsp coconut flakes, 8g
  • 2 tbsp raw cashews, 16g
  • 1 tsp orange zest
  • 1/2 tsp dominican vanilla or vanilla paste/extract
  • 1/4 tsp kosher salt

Instructions

  1. Blend the yogurt, orange zest, orange juice, and lime using an immersion blender for one minute. Add agave, vanilla, and salt, then continue blending. Gradually incorporate the evaporated milk until fully mixed, adjusting sweetness or salt to taste.
  2. Stir in chia seeds and mix evenly. Cover and refrigerate for 10 minutes to let the seeds bloom. Stir again, breaking any clumps, cover, and chill overnight to gel completely.
  3. In a mini food processor, combine oats, medjool dates, coconut flakes, cashews, orange zest, vanilla, and salt, pulsing to create a crumbly mixture. Store in the fridge until needed.
  4. To serve, portion the chia seed mixture into bowls or jars and top with the crumble before enjoying.

Notes

Make sure to fully blend the ingredients for a smooth consistency.
The chia pudding can be made a day in advance for a quick snack or breakfast.
