- ¾ cup (93g) all purpose flour
- ¾ cup (64g) quick cook oats
- ¾ cup (150g) packed brown sugar
- 1 teaspoon cinnamon
- 6 tablespoons (78g) cold unsalted butter, diced
- ¼ teaspoon salt
- 1 pound strawberries, hulled and sliced
- 2 cups blueberries, frozen or fresh
- ½ cup (50g) granulated sugar
- 1 tablespoon lemon juice
- 3 tablespoons (24g) cornstarch
Instructions
- Preheat your oven to 350°F.
- Prepare the crumble by mixing flour, brown sugar, oats, cinnamon, and salt in a large bowl. Cut in the diced butter using a pastry cutter until crumbly, using your hands as necessary. Set aside.
- In another large bowl, combine strawberries and blueberries. Gently mix in granulated sugar, lemon juice, and cornstarch. Spread this mixture in the bottom of an 8-inch square baking pan.
- Top the berry mixture with the crumble, pressing down slightly to compact it.
- Bake for 30-33 minutes, until the crumble is golden brown and crunchy. For best results, serve it warm or at room temperature with whipped cream or ice cream.
