Description

These Mini Trifles are a delicious treat layered with fresh berries, creamy mascarpone, and luscious whipped cream. Perfect for gatherings, they offer a delightful mix of flavors and textures that everyone will love!


Ingredients

  • 1 ½ cups unsalted butter, at room temperature
  • 3 cups granulated sugar
  • 5 large eggs, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3 cups sifted all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 ¼ cups whole milk, at room temperature
  • 6 cups strawberries, chopped
  • 2 ½ cups small blueberries
  • 1 cup granulated sugar
  • 16 ounces mascarpone cheese, cold
  • 2 ½ cups heavy whipping cream, cold
  • 1 ¼ cup powdered sugar
  • 1 teaspoon pure vanilla extract

Instructions

  1. Preheat the oven to 325°F and generously grease two 5×9” loaf pans. Allow the butter, eggs, and milk to reach room temperature.
  2. Cream together the unsalted butter and sugar for several minutes until light and fluffy.
  3. Add the eggs one at a time, ensuring each is well mixed before the next. Mix the vanilla extract with the last egg.
  4. Sift the flour first, then measure out 3 cups, adding the baking powder and salt. Combine half of the dry ingredients with half of the milk until just mixed, then add the remaining ingredients and beat until well combined.
  5. Divide the batter evenly between the two loaf pans and bake for 60-70 minutes or until a toothpick inserted in the middle comes out clean. Allow the loaves to cool for at least 30 minutes before removing from pans. Run a knife around the edges to loosen, then cool completely before slicing.

Notes

For best results, ensure all ingredients are at room temperature before starting.
You can substitute a mix of berries based on your preference for different flavors.
These trifles can be prepared in advance and chilled until serving.
