Description

  • 2 boneless, skinless chicken breasts cut into bite-sized pieces
  • 2 medium zucchinis sliced into half-moons
  • 1 cup cherry tomatoes halved
  • 0.5 red onion thinly sliced
  • 2 cloves garlic minced
  • 2 tablespoons olive oil plus extra for greasing dish
  • 1 teaspoon dried oregano
  • 0.5 teaspoon dried basil
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes optional, for heat
  • 0.5 cup shredded mozzarella cheese or feta for mediterranean touch
  • 0.25 cup grated parmesan cheese
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions

  • Preheat the oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
  • In a large bowl, combine the chicken pieces, sliced zucchini, halved cherry tomatoes, red onion slices, and minced garlic.
  • Drizzle 2 tablespoons of olive oil over the mixture. Add oregano, basil, smoked paprika, salt, black pepper, and optional red pepper flakes. Toss thoroughly to coat evenly.
  • Spread the seasoned mixture evenly in the prepared baking dish.
  • Sprinkle mozzarella and Parmesan cheese evenly over the top.
  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and continue baking for another 10 to 15 minutes, until the cheese is golden and bubbly and the chicken reaches an internal temperature of 165°F (75°C).
  • Remove from the oven and let rest for 5 minutes. Garnish with fresh chopped parsley.
  • Serve warm with sides like rice, quinoa, pita bread, or a fresh salad.

Notes

For added flavor, let the chicken marinate in the olive oil and seasonings for 30 minutes before baking.
The dish can be prepared ahead of time and refrigerated before baking for a quick meal option.
