Description

These Meal Prep Breakfast Burritos burst with flavor and are super easy to make. Packed with eggs, cheese, and your favorite veggies, they’re ideal for busy mornings.


Ingredients

Scale
  • 1 lb meat, chicken sausage, bacon, ground beef, etc.
  • 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded

Instructions

  1. Cook the meat of your choice in a skillet over medium heat until fully cooked; transfer to a bowl using a slotted spoon.
  2. Add your chosen vegetables and a pinch of salt to the same skillet; sauté until soft for 3-5 minutes.
  3. In a large bowl, whisk together the eggs and cottage cheese with a bit of salt and pepper; pour this mixture into the skillet with the vegetables and scramble until cooked.
  4. Lay one tortilla on a flat surface; add ¾ cup of the egg mixture, 2 tablespoons of meat, and 2 tablespoons of cheese.
  5. Fold in the sides of the tortilla and roll it up; continue this process until all fillings are used.
  6. Wrap each burrito in foil for storage, place on a baking sheet, and freeze to prevent sticking. Once frozen, move to a plastic bag for long-term storage (up to 2 months).
  7. They can also be wrapped and kept in the fridge for up to 1 week.
  8. Reheat in the microwave or bake in the oven at 375°F for 15-20 minutes.

Notes

Feel free to customize the veggies based on your preferences.
For a spicier kick, add some jalapeños or hot sauce to the filling.
These burritos are great for meal prep and can easily be made ahead for busy mornings.
