- 1 ½ cup (1 can) cooked green lentils, drained
- ¼ cup crumbled feta
- 3 tablespoons chopped parsley
- 2 tablespoons chopped onion
- 1 tablespoon extra virgin olive oil, plus more for drizzling
- ½ tablespoon lemon juice
- ¼ teaspoon salt, or to taste
- ⅛ teaspoon pepper, or to taste
- 6 slices of bread (ciabatta or artisanal bread)
Instructions
- In a bowl, smash half of the lentils using a fork or spoon, then mix in the remaining ingredients for the dip and adjust seasoning to taste.
- Preheat the oven to 200°C (400°F). Place the sliced bread on a baking tray and toast until golden and slightly crispy, about 5 minutes.
- Top each toasted slice with a generous spoonful of the lentil dip, and optionally rub with a garlic clove before serving. Enjoy at room temperature.
