Description

Ingredients

  • 1 teaspoon olive oil
  • 1/4 cup diced shallot
  • 1 cup jasmine rice
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon garlic powder
  • 1 1/2 cups low sodium chicken broth
  • zest of a lemon
  • 2 tablespoons fresh lemon juice
  • 12 tablespoons chopped fresh dill

Instructions

  1. Heat olive oil in a saucepan over medium-high heat and sauté the shallot for 30 seconds.
  2. Stir in the rice, garlic powder, and salt, toasting for another 30-60 seconds.
  3. Add the broth and lemon zest, stir, and bring to a boil. Cover and reduce heat to low, cooking for 15-20 minutes.
  4. After cooking, remove from heat and let it stand covered for another 5-10 minutes. Uncover and stir in lemon juice and dill, adjusting salt if needed.

Notes

For a vegetarian option, use vegetable broth instead of chicken broth.
Adjust the quantity of lemon juice based on your taste preference for acidity.
Leftover rice can be refrigerated and reheated for a quick side dish.
