Description

These Lasagna Roll Ups are filled with savory ground beef and creamy ricotta cheese, making them a delightful meal for families. Easy to prepare, they are perfect for a quick dinner or a comforting dish any night of the week!


Ingredients

  • lasagna noodles
  • 1 teaspoon kosher salt
  • ground beef
  • onion
  • garlic
  • marinara sauce
  • oregano
  • basil
  • salt
  • pepper
  • red pepper flakes
  • ricotta cheese
  • 1 egg
  • 1 1/2 cups mozzarella cheese
  • Parmesan cheese
  • parsley

Instructions

  1. Preheat the oven to 375°F and spray a 9×13 inch baking dish with cooking spray.
  2. Bring a large pot of water to a boil, add a teaspoon of kosher salt, and cook the dry lasagna noodles according to package directions. Drain and set aside.
  3. In a skillet over medium heat, cook the ground beef, breaking it up as it cooks. Add the onion and garlic, cooking until the onion is soft, about 3 minutes. Drain excess grease.
  4. Stir in the marinara sauce, oregano, basil, salt, pepper, and red pepper flakes. Simmer the sauce for 10 minutes.
  5. In a bowl, mix together the ricotta cheese, egg, 1 1/2 cups mozzarella cheese, Parmesan cheese, and parsley.
  6. Spread 1/2 cup of sauce in the bottom of the baking dish.
  7. Lay out the cooked noodles on a large rimmed baking sheet. Spread about 1/4 cup of the cheese mixture on each noodle and top with about 1 tablespoon of meat sauce. Roll up the noodles and place them in the baking dish. You should make about 16 roll ups. Pour the remaining sauce over the roll ups and top with the remaining mozzarella cheese.
  8. Cover the dish with foil and bake for 30 to 35 minutes. Remove the foil and broil for a few minutes to brown the cheese.

Notes

Cook more lasagna noodles than needed to account for any that may break.
Feel free to add vegetables like spinach or mushrooms to the cheese mixture for added nutrition.
Make this ahead of time and freeze for later baking.
