- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ teaspoon ground cinnamon
- 6 tablespoons salted butter (melted)
- 28 ounces sweetened condensed milk
- ½ cup sour cream
- 4 large egg yolks
- ¾ cup key lime juice
- ¼ teaspoon pure vanilla extract
- 2 teaspoons lime zest (optional)
Instructions
- Preheat the oven to 350°F (177°C).
- Line a 9” square baking dish with parchment paper, leaving handles, and lightly grease.
- In a bowl, mix graham cracker crumbs, sugar, cinnamon, and melted butter until combined.
- Press the mixture into the bottom of the prepared baking dish.
- In another bowl, mix sweetened condensed milk, sour cream, egg yolks, key lime juice, vanilla extract, and lime zest until smooth.
- Pour the filling over the crust in the baking dish.
- Bake for about 15-20 minutes until set.
- Allow to cool completely before cutting into bars.
Notes
For a firmer filling, ensure to bake until just set and refrigerate for a few hours before serving.
You can substitute regular lime juice if key limes are unavailable.
These bars are perfect served chilled and topped with whipped cream.
