Description
This chocolate meringue pie brings together deliciously rich chocolate filling and a light, fluffy meringue, making it an irresistible dessert that’s easy to prepare.
Ingredients
Scale
- 1 homemade or store-bought pie crust
- 1 cup granulated sugar
- ⅓ cup cornstarch
- 2 tablespoons cocoa powder
- ¼ tsp salt
- 2 ¾ cups whole milk divided
- 4 large egg yolks
- 6 oz bittersweet chocolate chopped
- 2 tbsp unsalted butter
- 1 ½ tsp vanilla extract
- 4 large egg whites
- ¼ tsp salt
- ½ tsp cream of tartar
- 2/3 cup granulated sugar
- ½ tsp vanilla extract
Instructions
- Roll out your pie dough and fit it into a 9-inch pie dish. Trim and crimp the edges if desired. Chill in the fridge for 30 minutes or the freezer for 15 to prevent shrinking.
- Prick the base of the crust all over with a fork to prevent puffing. Line the crust with parchment paper or foil, covering the bottom and sides. Fill with pie weights, dried beans, or sugar.
- Bake at 375°F for 20 minutes.
- Carefully remove the parchment and weights, then return the crust to the oven. Bake uncovered for an additional 10-15 minutes, or until the bottom is dry and lightly golden brown. Cool completely before adding your filling.
Notes
For best results, ensure your egg whites are at room temperature before whipping for the meringue.
You can substitute bittersweet chocolate with semisweet chocolate if desired for a sweeter taste.
Store leftovers in the refrigerator to maintain freshness.
