Description

Honey BBQ Chicken Bowls offer a delightful blend of sweet and savory flavors, featuring juicy chicken and fresh vegetables. This simple recipe is perfect for a quick dinner or a healthy meal that satisfies your cravings!


Ingredients

  • 2 pounds chicken breast
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1 cup bbq sauce
  • 1/4 cup honey
  • 1 cup long grain rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, (canned or frozen)
  • 1 head romaine lettuce, chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup pickled onions
  • 1/4 cup chopped cilantro
  • 1/4 cup ranch dressing

Instructions

  1. Cook the rice according to package instructions.
  2. In a skillet, heat olive oil over medium heat. Season the chicken breast with salt, pepper, paprika, and garlic powder before placing it in the skillet.
  3. Cook the chicken for approximately 6-7 minutes on each side, until fully cooked.
  4. Once the chicken is done, remove it from the skillet and let it rest for a few minutes before slicing it into strips.
  5. In the same skillet, combine the BBQ sauce and honey, and bring to a simmer. Return the sliced chicken to the skillet, coating it with the sauce.
  6. In bowls, layer rice, black beans, corn, chopped lettuce, chicken with BBQ sauce, cheddar cheese, pickled onions, cilantro, and drizzle with ranch dressing.

Notes

Feel free to customize with your favorite toppings or additional veggies.
For added flavor, marinate the chicken in BBQ sauce for 30 minutes before cooking.
Use a rotisserie chicken for a quicker preparation.
