Description

  • 3 Tbsp raw honey (melted (if solid))
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)
  • 8 cups chopped romaine (kale, or other greens, or a mix)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 med cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 8 slices bacon (cooked until crisp, and chopped or crumbled)
  • 6 hard boiled eggs (sliced)

Instructions

  1. To make the dressing, whisk together honey, dijon mustard, lemon juice, and avocado oil in a bowl or blend until smooth using an immersion blender. Set aside or refrigerate for later use.
  2. For the salad, combine sea salt, black pepper, garlic powder, and onion powder in a bowl. Season chicken breasts evenly with the mixture.
  3. Heat grill or grill pan to medium/medium-high heat, brushing with avocado oil. Grill chicken for about 5 minutes on each side until fully cooked, reaching an internal temperature of 165°F. Remove from heat and let rest on a cutting board.
  4. In a large bowl, layer chopped greens, cherry tomatoes, sliced red onion, cucumber, avocado, crumbled bacon, and sliced hard-boiled eggs. Slice grilled chicken and add to the salad.
  5. Drizzle honey dijon dressing over the salad, toss gently to combine, or serve dressing on the side.

Notes

Adjust the dressing sweetness by adding more or less honey according to your preference.
