Description

These Healthy Applesauce Muffins are a delightful treat that’s simple to make! Filled with wholesome ingredients like oat flour and applesauce, they’re perfect for breakfast or a snack.


Ingredients

  • 1 ½ cups oat flour
  • 1 cup rolled oats, plus more for topping
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • ½ cup almond milk
  • ½ cup maple syrup
  • 2 tablespoons melted coconut oil or avocado oil
  • 1 teaspoon vanilla

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with paper liners or grease the cups lightly.
  2. In a medium bowl, mix the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt until combined.
  3. In a separate large bowl, whisk together the eggs, applesauce, maple syrup, almond milk, vanilla, and oil until smooth.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined, avoiding overmixing.
  5. Pour the batter evenly into the muffin cups and sprinkle with additional rolled oats on top.
  6. Bake for 18-20 minutes, or until a toothpick inserted in the center of the muffins comes out clean.
  7. Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store the muffins in an airtight container for up to a week.
These muffins can be frozen for later enjoyment; just thaw before eating.
Feel free to substitute the almond milk with your preferred milk if needed.
