- ½ cup almond milk
- ½ cup maple syrup
- 2 tablespoons melted coconut oil or avocado oil

Instructions
- Preheat your oven to 350°F and line a muffin tin with paper liners or grease the cups lightly.
- In a medium bowl, mix the oat flour, rolled oats, baking powder, baking soda, cinnamon, and salt until combined.
- In a separate large bowl, whisk together the eggs, applesauce, maple syrup, almond milk, vanilla, and oil until smooth.
- Gradually add the dry ingredients to the wet mixture and stir until just combined, avoiding overmixing.
- Pour the batter evenly into the muffin cups and sprinkle with additional rolled oats on top.
- Bake for 18-20 minutes, or until a toothpick inserted in the center of the muffins comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
