Description

  • 1.5 cups all-purpose flour
  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon
  • ¼ teaspoon nutmeg
  • 2 cups diced Granny Smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 425°F and line 6 wells of a standard 12-cup muffin tin with paper liners, skipping a well between each one.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg until evenly mixed.
  3. Add 1.5 cups of the diced Granny Smith apple to the dry mixture and toss until lightly coated in flour.
  4. In a separate bowl, whisk the avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth and creamy.
  5. Pour the wet mixture into the dry ingredients and fold gently until just combined, being careful not to overmix the batter.
  6. Divide the batter evenly among the 6 prepared muffin liners, filling each to the top.
  7. In a small bowl, mix the topping brown sugar and cinnamon, then sprinkle over the muffins, adding the reserved apples on top.
  8. Bake at 425°F for 5 minutes, then lower the temperature to 350°F without opening the oven door and bake for an additional 13-18 minutes.
  9. Once baked, let cool for 5-10 minutes before removing the muffins from the tin and repeating the process with the remaining batter.
  10. For the optional drizzle, mix the powdered sugar and milk until smooth and drizzle over the cooled muffins.

Notes

For best results, do not open the oven door while reducing the temperature to maintain the muffins’ height.
Ensure your cottage cheese is blended smooth to avoid any curds in the mixture.
