Description

This Grilled Corn Salad is bursting with flavor from fresh corn, ripe tomatoes, and fragrant herbs. Perfect for summer cookouts, it’s easy to prepare and a delightful addition to any meal.


Ingredients

  • 4 ears of corn, shucked and silks removed
  • ¼ cup olive oil
  • 1 cup cherry or grape tomatoes, quartered
  • 1 english cucumber, sliced and quartered
  • ½ medium red onion, diced
  • ¼ cup chopped fresh herbs
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • optional: crumbled feta

Instructions

  1. Preheat your grill or grill pan to medium-high heat.
  2. Brush the corn with 2 tablespoons of olive oil and grill for 8 to 10 minutes, turning occasionally.
  3. Once grilled, transfer the corn to a plate and let it cool before cutting off the kernels with a knife.
  4. In a large bowl, combine the corn kernels, tomatoes, cucumber, red onion, and fresh herbs.
  5. Drizzle the mixture with 2 tablespoons of olive oil, apple cider vinegar, salt, and pepper. Stir everything together until well mixed.
  6. Optionally, add crumbled feta on top just before serving.

Notes

Grilling the corn adds a smoky flavor; ensure even charring for best results.
