Description

This Grilled Corn Elote Style brings irresistible smoky flavor and creamy toppings together. Simple to prepare, this dish is perfect for summer gatherings.


Ingredients

  • 4 ears corn
  • 3 tablespoons mayonnaise
  • 1/2 cup sour cream
  • 1/4 cup cilantro, freshly chopped
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/4 cup cotija cheese
  • 1 lime, juiced
  • chili powder, to taste
  • 2 limes cut into wedges, for garnish

Instructions

  1. Remove the husks from the corn, ensuring the core remains attached.
  2. Preheat a hot grill or cast iron pan. Grill the corn, turning until slightly charred on all sides.
  3. In a medium bowl, combine the mayonnaise, sour cream, and chopped cilantro.
  4. Once grilled, take the corn off the grill and use a basting brush to coat it with the mayonnaise mixture.
  5. Squeeze lime juice over the corn. Generously sprinkle with Parmesan and cotija cheeses, then add chili powder to taste.

Notes

For added flavor, try mixing in some garlic powder into the mayonnaise mixture.
If available, fresh lime zest can enhance the lime flavor on the corn.
Make sure to grill the corn until the kernels are charred but still juicy.
