- 4 boneless skinless chicken breasts (about 6–8 oz each)
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 ½ teaspoons salt
- Black pepper to taste
- Avocado oil or other high-heat oil
- 1 cup mayonnaise
- 3 cloves garlic, minced
- 1 tablespoon dijon mustard
- 1 tablespoon lemon juice
- 4 brioche buns or ciabatta rolls
- 2 avocados, sliced
- 1 large tomato, sliced
- lettuce leaves or arugula
- 8 slices crispy bacon
- ½ red onion, thinly sliced
- Dill pickles
- hot honey for drizzling
Instructions
- Prepare the garlic aioli by mixing all ingredients in a small bowl and set aside.
- Dry the chicken breasts using paper towels, then preheat the grill to medium-high heat. Combine garlic powder, paprika, salt, and black pepper in a small bowl. Rub chicken breasts with avocado oil and season the chicken evenly on both sides.
- Grill chicken for 4-7 minutes per side until the internal temperature reaches 165°F (74°C). Allow chicken to rest for a few minutes after grilling.
- Slice the brioche buns and lightly toast them on the grill while the chicken rests.
- Spread garlic aioli on the bottom half of each toasted bun, then place a grilled chicken breast on top.
- Layer avocado slices and tomato on each sandwich, followed by lettuce and crispy bacon. Optionally, add dill pickle slices.
- Drizzle with hot honey to your liking before topping with the other half of the bun.
- Serve the sandwiches immediately for the best flavor.
